- Rotate the food. Use it up before it becomes inedible and get rid of it once it's past the point that you really won't eat it.
- Portion things using re-usable moulds. I use ice cube trays and 1-cup round containers primarily but I've been known to use muffin cups. Once frozen, remove the mould and store food in large bags until needed.
- Use a layer of water/ice on top of the food. The sides and bottom of the mould tend to form a smooth layer that is fairly freezer-burn resistant but the top is susceptible Pouring a thin layer of water on top of the portion just before freezing forms a protective layer of ice on top. (Do this only if it's the kind of food where you'd probably add a little water while re-heating anyway)
